Tbh my heart is a hair’s breadth more towards the snowflake. It became more than that when the Rolex dealer told me that there’s a year-long waitlist for the basic black gmt... online forums suggest up to 3 years for other models -.-

Absurd. I’m looking to buy to celebrate a life milestone, not future retirement. Is this common these days? Are we paying a ‘popularity tax’ with time and money? Heard that the wait lists have been around for some time and supply has not kept up.
 
It would have to depend on the rest of the collection and what is “missing”. If I feel like I have all my needs met, such a sports watch, a formal watch, etc, then I would go with what is more fun and likely to make me smile, which, in this case, would be the Snowflake.

First of all both great choices. My personal preference is the rolex GMT. Just prefer the design and style a little bit more. I especially love the ceramic bezel. My current grail is the Pepsi jubilee GMT but I will be waiting for pricing to come down to a realistic level.

Yea that is pretty common with Steel Rolexes. Over the years the model en-vogue has shifted but there have almost always been steel models with waitlists since the Daytonas in the late 90s. Par for the course.
Buy one from a grey market dealer if you need one immediately.

I'd go GMT if you want this to be a main watch and a lifelong keeper.

Grand Seikos are pretty terrific in their own right -- I disagree with such a carte blanche statement coming from the likes of you.
I prefer Rolex over Grand Seiko for many reasons and Rolex is Rolex. Grand Seiko might be refined and everything but the after sales and repair service is horrible and horrendous and no watchmaker that I know in France wants to touch or service a Grand Seiko so that is also why I will never ever buy a Grand Seiko. Not to mention about resale value. I would rather have a Glasshütte Original over a Grand Seiko.

Only Rolex knows for sure, but common wisdom says that they've been keeping their sports models scarce on purpose. I can take you to an AD who, last I asked, was trying to move some two-tone Datejusts at a discount.

I feel that a DJ is a more direct comparison to a GS Snowflake than a GMTII anyway.

Well tbh my brain views the gmt and snowflake equally but my heart has gravitated back to the snowflake since the days i started this thread. But please, feel free to keep the discussion going. Suggestions on other pieces that can rival the snowflke’s artistry are also most welcome.

And I'll say again how much I like the champagne-colored GS models. I would have chosen this over the Snowflake when I saw them both in a local shop.

Wanting and having are two very different experiences.
Just choose one, then (eventually) move on to the next.
Like with your Tag, living with the watch is the only way to know if it's "the one".
After this potentially long process, your forever watch may end up being the one you bought for the second time, or the one you have when you run out of funds.
It may even end up being a G Shock.
 
The Rolex GMT is a good looking watch but if you get it you're just another guy among millions that many non-WIS regard as human lemmings.

The Grand Seiko Snowflake is an extraordinarily good looking watch, so unusual, and rarely seen that you'll never be thought of being a human lemming.
 
It is really apples and oranges here. Get whatever speaks to you. That said, there may be a "middle ground" A GS hi-beat GMT provides the functionality of the Rolex with the aesthetics of GS. Here is one option, but there are several others. And Rolex dials (which seems a priority for the OP) cannot hold a candle to those of GS when seen in the metal.
