I originally was attracted to the fluted bezel with blue dial and jubilee in ss. But, i am now liking the smooth bezel. A white dial, smooth bezel and jubilee looks understated classy to me. Likely to not attract undue attention as well. Thoughts?

Datejust - fluted vs smooth bezel
It is an extremely versatile watch. One can dress up a Datejust with a fluted bezel and jubilee, or make it sportier with a smooth bezel and an oyster. My DJ41 has smooth bezel and oyster and is quite sporty for a Datejust. I may get a second one, 36mm, jubilee and fluted bezel for a more formal, dressier watch.

Smooth bezel with Oyster is a sport watch you can dress up, fluted/jubilee is a dress watch you can wear with jeans. Right now I would say just get any combination that you AD has in stock. 
Smooth, Oyster, and all stainless = moves it the sporty direction.
Fluted, Jubilee, two tone= moves it in the dressy direction (and is probably the “classic” DJ)
Just depends on what you want. I want sporty. I’m not going into the office or visiting clients anymore, and don’t see much of that in my future.

I’m leaning toward smooth /oyster but jubilee /fluted is probably the more ‘iconic’. Interestingly I’ve heard from owners that the fluted/jubilee is a bit LESS blingy IRL because the muliply interrupted surfaces diffuse/reflect the light rather than shine off of the highly reflective polished center links and bezel of the smooth version.
It's really not flashy IRL. From any normal distance, it just looks like "a nice watch." The fluted/jubilee combo is gorgeous but insofar as it is more iconic, it's also pretty easy to identify as a Rolex from a distance.

I can see a place for both the fluted bezel/Jubilee combo and the smooth bezel/Oyster combo. My Oyster Perpetual 39 in white is a perfect everyday watch.

I think smaller datejusts look better with Fluted, whereas the 41s seem more at home with Smooth bezel. My two cents!
Smooth/Oyster is more casual. Which is best depends on your lifestyle and what other watches you have.
I am old school when it comes to the DJ……. Blue dial, stick markers, fluted bezel and jubilee.
The DJ should be a dressy watch, but with a plain bezel on an Oyster it is very toolly, and if I was gonna get a tool watch it would be the EXP1.

Fluted looks fantastic with the jubilee, and smooth looks equally fantastic with the oyster bracelet. Engine turned is also a nice look.
I feel like it depends on how many watches you intend to have.
I feel like a DJ36 domed/oyster makes a great one watch for any occasion... an excellent balance of sporty and dressy.
If you have sporty covered with something else, though, maybe fluted/jubilee is a better fit for something more specifically dressy with that iconic Rolex look.

I have both smooth and fluted for my president and date just. I switch between fluted and smooth on the date just often. I have yet to go smooth on the president. I don’t think smooth looks good with the jubilee band. I have the oyster on my date just so smooth looks good.
