Day Date Auto choice help

Hello, I've been browsing the forums for a few weeks trying to find a watch which fits my whim. This would be my first serious watch:
My wrist is a hair under 7 inches and I'd like the watch to fit traditionally, not big or small. I believe 40mm is good for me but could be wrong. Maybe from 38 to 42?
I am only considering automatics
Day/date is the most useful complication for me (never know what day I'm waking up to!)
I'd like good lume also.
Water resistant for swimming and diving into a pool or similar 100m? No need for snorkeling or diving (likely cover that later on or with something inexpensive like a Seiko 5 or quartz)
Versatility for use on different straps which I might use for business travel to holidays and weekends. Don't care for the very sporty or colorful types. Dive bezels I'm on the fence about.
My budget started below US$500 but I've looked at several options up to US$650

I've come to realize that covering all of these items on same watch which also appeals to me aesthetically is not easy.
I have ruled out importing from Europe or Japan because I'll be having it sent to a mailing office which has already told me that if import duties are owed they will not receive the package.
Ok, so this is getting long...but here is a rundown of what I've been considering:

Started looking at Hamilton Khaki King but 50m WR does not cut it (I don't like their Scuba) and would prefer something less ubiquitous. Similarly Brands like Bulova, Fortis, Tissot, etc don't appeal to me.
Much prefer 3 o'clock date window also.

Many of the other watches I've seen and liked on the internet don't have day display, are not WR enough, or require an import: here's a quick glimpse:

Seiko Alpinist does not have day and requires import. 200m WR is nice though.

Okeah, same as Seiko above +only 50m WR

Same as above

The MKII looks great but is discontinued and the new ones are beyond my price range.

Which brings me to the Mido Multifort 38mm on SS bracelet which retails for US$632 at shop4brand.com
100m WR, day date (black on black), quite classy, seems versatile. Only dubious point is the lume on this one. Seems grainy in photos I've seen.

Would like to wear on brown leather at times (see my photomontage!), maybe even nato strap:

I wonder what size wrist this guy has, it looks a tad bit small on him I think:

I would appreciate any suggestions or insight. I'm going to try and find a Multifort to try on around town but here in Buenos Aires it may be hard. I'm a little scared of spending a lot of money (to me) on something I might not be entirely comfortable with.

Thanks for looking, and sorry for the length of the post.
Cheers.

Thanks for the suggestion Lucduc. I forgot to mention in my original post that I would probably be buying an inexpensive Seiko as well. So I will be taking your suggestions into account for my other purchase. On that front I'm torn between the diver and military styles. Mostly based on what I've seen the guys at Worn and Wound show. Thanks again.
I'm like you Bakauata, I forget which day it is... often. Must be all the late nights and graveyard shifts lol. Also I often forget what time I parked the car, or started cooking something etc. So divers bezel comes in very useful for me. I vote for diver style.

Hmmm, can I time things over an hour on a bezel? I will do a little more searching through divers though.
I just got back from a shop that sells Mido. No Multiforts but I did try on 38s and 42s and I think 38 is a bit small after all. Tried a Hamilton aviator in 38 also and it did seem small on my wrist.
What do you think of a watch from Seiko's SARY line?? I had a SARY015 and it was beautiful. Can be had for well under $500. 40mm, automatic, day and date, 10ATM WR, and decent lume.

I have the Mido Multifort 38mm gray dial and I can highly recommend it. I like its size and I have a 6.75" wrist. My sweet spot is 38-40mm case size. If you think it's small, go for the 42mm version. It looks much better in person and in particular in daylight than any photos I could find. Great on a variety of straps and bracelet.
