Gübelin, as you may know, was and remains a high-end Swiss retail store. They produced very high-quality watches under their own name during the '40s and '50s, and yours is a good example. The movement is a high-class Cyma movement, which was also used in some of that manufacturer's chronometres (I own one). I'll have to check the caliber.
What separated Gübelin from other, otherwise similar retail stores in Switzerland is that they would finish high-quality base movements in house.
I would guess that your watch dates from the late '40s or early '50s, though it could have been made a touch later than that.
