Not watch related but after you've gotten the Grand Seiko: Celebrate with Wagyu kobe beef! Haven't been to Japan for 10 years so I cannot recommend a restaurant but read a reputable guide book to find a good restaurant that serves it and splurge! (unless you abhor red meat, in which case Tsukiji fish market)
All department stores or gadget shops have a luxury watch section where you can buy anything from GS to Rolex. On dept stores you can buy also very high end Swiss (Breguet, PP, AP, AL&S):
