I'm sure there's a thread discussing this already, but aside from the hardware and fabric itself, what are the real differences between the two. For some reason I think that 5-ring ZULUs are used by actual divers? Any thoughts on the matter?

This how I attach Zulu style straps to watch heads using the fourth/fifth "extra" ring on the six o'clock side for the purpose to reduce strain exerted on the springbars and hence reduce the chance of a spring bar failure.
I strap Zulu/NATO style straps rather tightly before getting into water, since most of these straps tend to stretch somewhat when wet.

For comfortably wearing four/five ring Zulu style straps attached this way on a relatively thick wrist or over a diving suit a strap length of about 300 mm (12 inch) length to make up for the extra loop is preferable.
When this is not long enough, Zulu style straps with a strap length of about 430 mm (17 inch) are also available.

Both are more or less the same in construction, just more loops/rings with one than the other.
