The Monaco is just the watch I saw that one episode; he's got more than one watch.
Maybe one reason he's got multiple watches is because he gets scratches and dings on them so often from that there desk.
Or maybe he just likes watches? I own many pieces not because of desk diving, but because I have a sickness. And I don;t have Colbert's $3.5mm + bonus salary...

You can get a good look at the last segment just before he interviews the guest (the camera pans up as he stands up and does his thing across the stage floor). This is a small thing, I know - I think it's funny how Colbert employs his subtle humor everywhere including props and furniture.
What kind of watch is he wearing? All I can tell is that it has the red & green TAG Heuer logo, a 12 at noon, and Mercedes hands. I am thinking it is a TAG Heuer 2000 from the 1995-era selection. Maybe the TAG Heuer 2000 Classic WK1112? I am just not sure the bezel looks right. Here is a screen shot closeup from 8:08 of the two watches bit:
