Some folks like 'em thick and some folks like 'em thin. Some roll both ways.
My daily wear Seiko divers are pretty chonky, Tunas or divers. But I also own Seikos that are dressy or casual that are more svelte.
And sometimes, a man just feels the need to switch it up. Here are the extremes of my collection.

I like to stay under 11.5mm but it also has to be at least 10mm to rise above my hairy arms. The Prospex with that bezel would do a number on my door jambs.

I like the 10-12mm range for anything but divers, and for those I am comfortable up to 16mm if needed.

Cartier Basculante Mecanique Model 2390 Cartier 610 Fréderique Piguet movement that's 2.3mm thick. Overall thickness 6mm.

Dunhill Wheel Watch Chrono Dubois-Depraz modified ETA 2824-2 thickness 11mm.

I think it’s about the thickness in relation to the other measurements of the watch. I just purchased a breitling Chronomat and when I tried it on o was impressed at how thin it looked/felt on my wrist. But it’s not. So the numbers only tell one story. I think, for me, I don’t like it thicker than it needs to be for the given style and movement.

15.10 mm thick and I don’t think it looks it or feels it.

I don't do chunky at all. A couple of my dress watches are pretty thin but I like middling watches like Datejusts, Subs/GMTs, Speedmasters, and similar.

11.6mm for the OP36; 14.5mm for the FOIS.
