Hello,everyone. I'm a student in switzerland. I'd love to buy a watch for my father and I was wondering if anyone could give me some advice.
My budget is only 500-1000sfr, and I'd like to choose mechanical, long dimension.
I would be grateful if anyone could help me. Thank you very much.

At the 500 Swiss Francs level, Steinhart, Hamilton, Seiko SARBs

At the 1000 Swiss Francs level, my first thought--assuming we're going for a semi-formal type of watch, was Stowa.
The Antea and the Marine line both come in at your price point (about), and Stowa will custom engrave cases, rotors, or gears, which would make the watch extra special.
I don't own either, but I've seen the antea in real life, and was blown away.

Longines is a good brand. Your watch choice is good and could fit the taste of a retired man (your father).

Other brand to consider is Tissot - the Le Locle model is within your budget and very dressy
