My GMT hand is always set to home time. And the reason is that's how it's designed to work. It's the 12 hour hand that's set to whatever local time I'm currently in. And the reason (again) is that's how it's designed to work. Confused by the OP question.
It’s “designed” to display whatever time zone the user wants to display. If it wasn’t designed that way one would not be able to set the GMT hand independent of the regular hands.

Everyone's home time is different based on their home location. If this doesn't make sense, try reading it slower and see if that helps.

Confused by why you think everyone lives in the same timezone. The world isn't flat, you know. I'm going to stop feeding the troll now.

My world is a pizza - flat as a pancake - or pizza!
 
Keep mine set to my local time and it just serves as a 24 hour indicator
 
If I'm in the Netherlands, gmt hand is Mexico time.

If I'm in Mexico, Netherlands time.

My wife is mexican and I live in the Netherlands. She is not allowed, yet, to live with me. My choice of timezones now makes sense I believe.

GMT hand set to where I grew up, because I'm sentimental.
If I travel: GMT hand to home, and hour hand to local.
The pictured watch doesn't work that way. 24hr hand is slaved to the hour hand, no separate adjustment possible; bezel indicates 2nd timeone.

of course, that what I meant 🤷‍♂️ I actually like this system for the simplicity of turning the bezel over fiddling with the crown. It has its limitations, but it also has its charm.
And yes, technically it's not the GMT hand that's ste, but I just figured I'd go with the spirit of OP's post rather than the letter.
