Landscape has changed a little since I last got a Seiko modified. Who is the go to shop for mods (crystal, stem, hands) on a Turtle followed by a 20 ATM pressure test?

You should be able to go to any AD that sells dive watches as they generally have a "guy in the back" who will do general maintenance on them including gaskets and a proper pressure check. I used to bring my TAG-Heuer quartz watches to the AD I bought them at for battery changes and they always changed the gaskets and did a full pressure test as a courtesy (also provided the pressure test receipt.) Of course not every AD is willing to or has a "guy in the back" but, if they do, you should at least be able to get that done after your mod guy does the mods.
If worse comes to worse you can watch some Youtube videos and find out how to acquire and use your own pressure check rig. I mean, we all have timegraphers, case back wrenches, stem pullers, crystal presses, etc.!
